Since 2013, Michelin-starred Chef Hervé Paulus, based in Marrakech, has imagined the unique culinary experiences offered at the heart of Nomad’s Land. HERVÉ PAULUS
Born in Alsace, Hervé Paulus is a self-taught and passionate chef. His reputation was built through hard work, boldness, and a deep love of flavor. From leading L’Ancienne Forge in Hagenthal to Hostellerie Paulus in Landser, he earned Michelin stars for authentic, heartfelt French cuisine.
After a career marked by remarkable encounters and challenges met with flair, he fell in love with Marrakech, a true coup de cœur. Here, alongside his team and wife Stéphanie, he has chosen to rewrite his story.
